Healthy Kabobs

Chicken Kebab
6 Qts Pineapple Juice
¼ C low sodium soy sauce
¼ C Light brown sugar
1 TB Molasses
2 TSP Fresh ginger
2 TSP Fresh Garlic

To compliment the chicken on the skewer, add fresh bell peppers, pineapple, red onion, and zucchini

Grill on high heat, rotating periodically until char marks begin to show. Cook until chicken reaches internal temperature of 165 degrees, fully cooked. Coat in extra marinade

Beef Skewers
½ C Italian dressing
½ C BBQ Sauce
2 TBS Montreal steak seasoning
1 TBS Scallions

Add fresh bell peppers, red onion, and zucchini to the skewer

Grill on high heat, rotating periodically. Add extra marinade while cooking, and coat lightly. Cook until internal temperature of the beef reaches 145 degrees.

Shrimp Caesar
Grilled marinated shrimp on grilled romaine lettuce
Shaved parmesan cheese
Grilled lemon juice
Kens Caesar dressing

Grill marinated shrimp for 5-7 minutes, until cooked. Place on top of grilled romaine lettuce, squeeze grilled lemon and add Caesar dressing to compliment. Top with shaved parmesan.

Add a low-fat yogurt on the side as a dip
